You cannot send an invoice in Spanish from the 2Checkout system automatically but you can preview the English invoice that is created before you send it. You could create the invoice and translate the invoice into Spanish and manually email this to your customers.
You can also email your customers a completely custom invoice by creating your own purchase link and sending it directly to them. If you need assistance creating your own purcahse link you can open a support ticket here or review the parameter set articles located here.
